We were at the Benmiller Inn twenty plus years ago for part of our honeymoon and back to the Benmiller Inn and Spa a few years ago for our anniversary. In fact there was such a severe snow storm that we were stranded and snowed in at the Inn. Had to spend an extra day before we were able to depart - what fun!!
Dad's Special Casserole
1 lb. ground beef 1/2 cup chopped onion 2 cups cooked noodles 1 can cream of mushroom or celery soup 1/2 cup milk 1/4 tsp. pepper 1/2 tsp. salt 1/4 tsp. tyme 3/4 cup cheddar cheese Shred or grate cheese to start preparation. Brown meat and onions with a drizzle of olive oil. Stir in soup, milk and spices. Cook approximately 15 minutes. Layer noodles and meat mixture into a baking dish and top with the prepared cheese. Bake at 350 deg. F until bubbling. Optional: Sliced celery can be added. NUT's & BOLT's
3 cups shreddies and 3 cups cheerios 3/4 to 1 cup salted nuts 3/4 to 1 cup pretzel sticks 4 Tbsp. Worcestershire sauce 6 tbsp. butter (or margarine) 1 tsp. seasones salt Preheat oven to 250 deg. F. Heat butter in a large shallow baking pan in oven until butter is melted. Remove and stir in seasoning and Worcestershire sauce. Add remaining ingredients - mixing to coat. Heat for 45 minutes in oven. Stir (to incorporate flavours) every 15 minutes. IMPOSSIBLE PIE
4 Tbsp. butter or margarine 4 eggs 2 cups milk 1/2 cup coconut 1 tsp. vanilla 1/2 cup sugar 1/2 cup Tea Bisk or flour Eveything into a blender and mix for two minutes. Pour into a 9 " pie plate that is greased and floured. Pre heat oven to 450 deg. F. then bake pie at 350 deg. F. for 45 minutes - do not prick just let cool. (thx June) PUMPKIN BREAD
In a large bowl mix well 4 eggs, 1 cup oil, 2/3 cup water. Add in 2 cups prepared pumpkin or 1 can regular pumpkin. Add dry ingredients 3-1/2 cups flour, 2 tsp. soda, 1-1/2 tsp. salt, 1 tsp. cinnamon, 1 tsp. nutmeg, 3 cups sugar to wet mixture and mix well. Pour all into greased pan(s). Bake at 350 deg. F. for about 1 hour (a little longer if necessary, keep an eye on). Optional: Include with your ingredients any chopped nuts you prefer - like walnuts, pecans, almonds... |

2 cups small red lentils and 1 cup medium lentils 4 slices of bacon, side bacon or equiv. smoked chop 2 medium onions, finely chopped 2 carrots & optional 1 celery stalk (all finely chopped) 5 sprigs parsley, finely chopped 2 minced garlic cloves and 1/2 tbsp. pepper Wash the lentils and place them together with 10 cups of water and the other ingrededients into a large pot. Let simmer uncovered 1-1/2 hous. Now Add: +/- 30 ounces canned tomatoes (1-1/2 tins), 3 tbsp. wine vinegar 3 tsp. salt and pinch of oregano pinch of red pepper, paprika, cayenne pepper and some splashes of liquid hot sauce (all as preferred to spice things up) Let simmer 10 minutes. Preference is to blend into a thick consistency (not runny). Continue simmering, taste for seasoning and serve when hot. Provides for ten good servings. YOU LIKE MUFFINS? WAIT DON'T RUN, THESE BANANA MUFFINS ARE TASTY AND FUN
& easy & moist & great for breakfest & ... Don't discard those over-ripened bananas. The ones that are getting soft or bruised and black. Here's a solution for you and them. If you don't have the time to prepare the banana muffins right away, just place the over-ripened bananas into the freezer until you have the time. Remove the bananas from the freezer with adequate time to thaw a little. The fact that the banana peel will appear black doesn't hurt. It means that the inside will be soft and add nicely thawed in with the rest of the ingredients. 1 cup mashed bananas 1 cup "Miracle Whip" salad dressing 3/4 cup white granulated sugar 2 cups flour (2/3 c whole wheat, 1-1/3 c all-purpose) 2 tsp. baking soda 1/2 tsp. salt In a medium to large bowl (you can easily double the ingredients) beat bananas. Beat in sugar and Miracle Whip. Combine flour, soda and salt and and stir into mixture until moistened. Fill into, previously greased, muffin cups and bake at 350 deg. F. for 20 minutes. Yields about 12 muffins. COOKED RED CABBAGE
Prepare and shred two (2) good sized medium red cabbages. Finely dice two (2) medium sized onions and saute with a drizzle of olive oil in a pot large enough to hold the cabbage. When onions are caramelised add the red cabbage to the pot together with liquid consisting of 1/3 cup water, 1/3 cup vinegar and 1/3 cup red wine. Sprinkle with a pinch of salt and pepper. Add two (2) small bay leaves and five (5) cloves. Cover pot and continue cooking over medium heat. Peel and core two (2) large apples; cut up apples into small pieces and add to pot. Also add 1/4 to1/2 cup sugar depending upon your taste) and stir in ingredients. During cooking period check tenderness of apples and and stir. Cook until apples have incorporated in with cabbage and cabbage is tender. During and towards end of cooking time (since people all have different taste buds), sample and season to taste and stir in. APPLE PANCAKES
Dry ingredients: 3/4 cup flour 1-1/2 Tbsp. sugar 1 tsp. baking powder Wet ingredients: melt 1-1/2 Tbsp. margerine 1 egg (beaten) 3/4 cup milk Main ingredients: 3 medium or 2 large apples ( peeled, cored and cut into small pieces ) sugar and cinnamon Mix and beat wet ingredients. Add to center of combined dry ingredients, which have been sifted. Wisk from outer edge inward and add apple pieces. Prepare apple pancakes on griddle ( may have to flip once for faster and more even cooking ). Place onto plate and sprinkle on top of apple pancake sugar and cinnamon.
